Okay, so I found a list of some dishes that we made a couple years back that were really good

Unfortunately I haven’t found the book with them in it yet, so preparation is not listed here, just Ingredients

I hope this helps and/or gives you some ideas

If I find the preparations I will post them as well

In addition to the dishes below will be Mashed Potatoes (Boil Potatoes, Mix Them With Vegan Butter And Almond Milk… Normally I Like Adding Curry, But Probably Not For Thanksgiving… Also Hit Em With A Bit Of Pepper If You So Desire)

Orange Ginger Glazed Carrots

2 pounds carrots

1 cup freshly squeezed orange juice

2 tablespoons organic sugar, brown sugar, or maple syrup

1 tablespoon grated, peeled fresh ginger

1 tablespoon cornstarch

1 tablespoon water

2 or 3 sprigs parsley or fresh mint

Almond and Olive Stuffed Brussels Sprouts

20 freshly cut Brussels sprouts

½ cup of Almonds, coarsely chopped

1 can water-packed artichoke hearts, drained

20 pitted kalamata olives, chopped

10 jumbo pimento stuffed green olives, chopped

1 shallot

2 cloves garlic

6 cherry tomatoes

Savory Chestnut and Fruit Stuffing

2 cups water

2/3 cup pearl barley

1 ½ teaspoons salt

8 cups whole bread cubes

2 ½ cups vegetable broth

3 large sweet onions, chopped

3 celery, chopped

2 large apples, cored and chopped

1 ¼ cups chopped, cooked and peeled chestnuts, or pecans, or walnuts

1 cup golden raisins

¾ dried cranberries

¾ dried apricots

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon pepper

2 tablespoons white miso

¼ parsley

3 tangerine wedges

3 fresh cranberries

Pomegranate Apple Salad with Ginger and Mint

1 large pomegranate

2 sweet, crisp apples, unpeeled, chopped

8 ounces edamame, cooked and shelled

1 navel orange, peeled and chopped

3 tablespoons maple syrup

2 tablespoons freshly squeezed lemon juice

2 tablespoons pomegranate molasses

1 tablespoon balsamic vinegar

2 to 3 heaping teaspoons minced peeled fresh ginger

¾ teaspoon salt

1 to 2 tablespoons minced fresh mint leaves
